Whole 30 Banger Sausage Bulk Seasoning Mix
My family loves the sausage seasoning in the Whole 30 Cookbook, but being a large family like ours necessitates making it in bulk. I scaled up their recipe to give me enough seasoning in a quart jar to use again and again, so that I don’t have to pull out all those bottles of spices every morning when we need to make some sausage.
The whole family participates on prep days when we take a whole pork butt and grind it in a meat grinder once, mix in the seasoning, and grind it a second time. This gives us a delicious breakfast sausage that we then portion out into 1 lb packages. The proportion is 1-2 tbsp of seasoning mix per pound of sausage. This is to your taste, of course. I tend to use closer to 2 tbsp per pound.
If you don’t need or want to grind a pork butt to make sausage, then you can use any ground pork from the grocery store.

- 1/4 cup garlic powder
- 1/4 cup onion powder
- 1/4 cup ground sage
- 1/4 cup dried thyme
- 1/8 cup fine ground black pepper
- 1/8 cup ground nutmeg
- 1/8 cup ground cayenne pepper
- 1 cup salt
- 1 tbsp lemon or orange peel optional
Instructions
- Pour all ingredients into a quart size jar, put on a lid, and shake to combine well. You could also mix well in a mixing bowl before pouring into a jar. Use 1-2 tbsp of seasoning for each pound of pork to make breakfast sausage.
